Som Tam Jae (ส้มตำ) – Vegan Green Papaya Salad
Raw green un-ripe papaya, chili, green beans, carrot, peanuts and coconut sugar make up our version of the Som Tam, a spicy salad.

  1. Start by washing and peeling your papaya
  2. Now using a shredder peeler make slivers of green papaya by running the tool over the green flesh, collect this on a plate.
  3. A plateful is about enough for a serving
  4. Now do the same with your carrot and make about half as much as the papaya.
  5. Remove the green heads from your chili
  6. Cut up your green beans into sections around 3-5cm long
  7. Wash and half your seeda tomatoes
  8. Half a lime and get your nuts to hand, you are now ready to make som tam!
  9. Add your green beans and chili to your mortar and pestle
  10. Add your nuts
  11. Mash it up with the pestle for a few minutes
  12. Now add in your papaya, carrot and tomatoes
  13. Continue bashing it with the pestle to mix up the ingredients and loosen the fibres, add a couple splashes of black bean sauce and a spoon of coconut sugar
  14. Add your lime in, squeeze the juices out an mix again
  15. Once everything is mixed up and looking as pictured, you are ready to serve
  16. Som Tam is usually served on a plate, with a side of raw cabbage and sticky rice or dry rice noodles. Som Tam goes great with fresh guava or orange juice!
